At lunch on Sunday my host made a rather unusual starter. I am sorry that I didn’t think to take a picture as he served it in a big sapphire blue glass bowl and it looked spectacular.
It is called Bulgarian Caviar Mousse and I’m looking forward to making it at home. It is food fit for a princess and indeed his recipe was supplied by one.
1 1/2 cups mayonnaise
1 1/2 cups sour cream
200 grm. “caviar” one uses Danish lumpfish roe
3 dessertspoons finely chopped onion
juice half lemon
3/4 sachet of powdered gelatin
Mix everything, folding rather than stirring, and at end add gelatin dissolved in warm water. Reserve a bit of lumpfish roe to decorate in middle and perhaps some chopped chives around the edge. Serve with buttered brown bread and iced vodka.
As well as looking good it was absolutely delicious.
Meanwhile continuing the blue theme, there is sad news from Gozo. The Azure Window that appeared in Building on Gozo, is no more. Both the top of the arch and the stacks on either side collapsed into the sea during a storm on 8th March.

I was at that lunch and indeed the Caviar Mousse was delicious. If I may, I will also add that it was served with large green salad leaves – that was the healthy element of this starter! I will use the recipe and possibly serve it too as an appetizer with drinks – using a small gem leaf as a scoop.
